The Mythical Venezuelan Porcelana Cacao

Among the world's ancient cacao strains, none holds a position as revered or biologically unique as Venezuela's Porcelana Criollo. Originating in the humid microclimates southwest of Lake Maracaibo in Zulia state, this legendary variety derives its name from the brilliant, translucent white color of its unfermented seed cotyledons.

Botanical Anomaly: The Translucent White Cotyledon

Standard cacao beans owe their purplish hue to high concentrations of anthocyanins—antioxidant compounds that impart astringency and heavy tannin bitterness. In pure Porcelana, a genetic mutation suppresses anthocyanin production almost completely. As a result, the beans inside the smooth, delicate pod are pure ivory-white.

"To taste 75% Porcelana is to reset one's perception of dark chocolate. The aggressive astringency associated with industrial cocoa disappears entirely, replaced by buttery macadamia, fresh strawberries, and sweet cream."

Fermentation and Solar Curing Protocol

Because Porcelana beans lack defensive polyphenol astringency, standard 7-day fermentation protocols would destroy their delicate ester aromatic profile. In our vault partner micro-estates in Zulia:

Sensory Wheel & Flavor Notes

When stone-ground for 72 hours without excessive roasting temperatures (kept strictly under 115°C), Porcelana yields an unmatchable sensory sequence:

Initial Attack: Melted butter, lightly toasted macadamia, and honeysuckle floral notes.
Mid-Palate: Ripe forest strawberries, clotted cream, and subtle cocoa nib sweetness.
Finish: Exceptionally clean, lingering silk finish without dry tannin residue.
